TWO EASY TOFU RECIPES

When you are in a meatless diet and is concerned with your protein intake, Tofu is one great alternative
for your protein. But if you don't like the taste of tofu or feel like it's so boring to eat, there are tons of tofu
recipes you can follow. I have chosen these 2 easy and tasty tofu dishes you can make at home.

 

1.) Tofu Stir-fry with peanuts


INGREDIENTS:

1/4 Cup Crushed Peanuts
Half Teaspoon Minced ginger
salt and pepper to taste
14 ounces cubed and drained TOFU
3⁄4 cup peanut sauce
1 Pack of stir-fry vegetables
Salt and Pepper
Cooking oil
2 Beaten Eggs
Cornstarch

Directions

Step 1
Cook the vegetables in a medium heat skillet. Stir until tender then put the ginger and sprinkle salt and
pepper and set aside.

Step 2
In a bowl, mix cornstarch, salt, and pepper. In a separate bowl, pour the eggs. Dip tofu cubes first in the
egg, then the cornstarch mixture for the coat.

Step 3
Now is the time to cook the coated tofu 5 minutes in a medium heat skillet you just used with your
vegetables, or until golden brown. Stir in the peanut sauce and peanuts. Stir until the sauce is thick and
the coated tofu is cooked. Serve with the vegetables. Enjoy!

2.) Vegetable Tofu Soup

INGREDIENTS:

Drained and cubed Tofu
6 cups of water or vegetable stock
1 tablespoon olive oil
Thinly sliced Green onions
Chopped Cabbage (2-3 cups)
Mushroom of your choice
Sesame oil
Salt and white pepper

Directions:

Step 1
Heat oil in a pot at medium heat then put the green onions and stir.

Step 2
Add water or vegetable stock and turn the heat to high wait until it boils. Then add cabbage and a pinch
of salt and cook for 2 minutes.

Step 3
Put the tofu and mushroom and cook for one minute. Sprinkle with salt and pepper and taste.

Step 4
Ladle the soup in a beautiful bowl and drizzle with sesame oil. Enjoy!
