HOMEMADE PHO RECIPE
When you are feeling under the weather or you have a hangover you sometimes think of comfort food like a flavorful Pho you can slurp at home because it is filling enough to energize you for a day. Pho is a popular Vietnamese food that usually takes hours and hours to cook because of simmering a rich and tasty soup which is too long for busy people. It takes time for the broth since flavors are achieved by simmering beef bones and oxtail in the pot with some spices. Here is a simplified way of making Pho you can cook at home in just 30 minutes. And the ingredients we can use that can be seen at home.
INGREDIENTS:
2 tablespoons olive oil
8 ounces dried rice noodles (feel free to substitute any other kind of noodles depending on what's available at home like pasta)
1 pound boneless and skinless chicken
Salt and freshly ground black pepper
3 minced garlic
1 tablespoon grated ginger
1 Thinly sliced Jalapeno
2 Limes cut in half
6 cups chicken stock
1 tablespoons fish sauce
1/2 cup fresh mint leaves
DIRECTIONS:
Cook rice noodles in a large pot of water, drain then set aside.
Add 1 tablespoon of olive oil in a large pot over medium heat
Sprinkle salt and pepper to the chicken then add the chicken to the stockpot and cook until golden for about 2-3 minutes and put aside. Put another 1 tablespoon oil to the stockpot with garlic and ginger then stir until fragrant for about 1-2 minutes. Then put the chicken stock and fish sauce boil it and reduce heat then simmer for 10 minutes. And ENJOY! Serve with rice noodles and chicken, garnished with onion, cilantro, mint, jalapeno, limes and other spices depending on the taste you like.
