I know it's challenging to prep meals or even just decide what to eat for the whole week especially if you are on a budget and chooses healthy food at the same time. Fast food can be tempting and will make every meal easier especially if you are on the go. But you don't have to buy expensive ingredients for every meal. It's possible to put healthy dishes on your table even if you are in a budget. You can save money without sacrificing taste or nutrition. Just use your creativity, be resourceful, learn ideas from other recipes, and you can make up your special homemade dish or upgrade your ordinary food at home. Besides, if you want a healthy meal, keep it simple. Try this low in price recipes but loaded in nutritious ingredients and rich flavor.

 

1.) Tasty Tilapia Fillets

Tilapias are very affordable and healthy. There are tons of recipes you can make with tilapia. Here's a simple recipe you can make at home. Plus, you can use whatever is available in your fridge for other ingredients.

Ingredients:

1 Tablespoon Melted Butter

1/2 Dried Parsley

Salt and Pepper to taste

1/4 Teaspoon Thyme

1/4 Teaspoon Paprika

1/8 Teaspoon Onion Powder

1/8 Teaspoon Garlic Powder

2 Tilapia Fillets

Other Seasoning of your Choice

Directions:

* Preheat Oven up to 425 degrees then put tilapias in the greased baking dish and put the butter.  In the meanwhile, mix remaining ingredients and sprinkle over fillets.

 * Cover and bake for 10 minutes. Enjoy!

 

 

2.) Sweet Potatoes in Mexican Style

 

Sweet potatoes are tasty and cheap. Plus it has good benefits to our body.

Ingredients:

1 can of rinsed and drained black beans

2 Sweet potatoes

Lime Juice

1 Tablespoon olive oil

1/2 Diced Onion

1/2 Diced Red Pepper

1 Minced Garlic

1/2 Teaspoon Salt

Directions:

* Bake Sweet Potatoes for one hour in a 400 degrees oven. Remove and slice lengthwise and scoop out everything leaving only a thin layer then set aside.

*In a frying pan, heat olive oil in medium heat and add all vegetables. Cook for 7 minutes and add salt to taste.

*Put black beans and lime juice then mash together to break the beans using a fork.

*Add the sweet potato flesh and mix.

*Load each potato skim with your bean mixture.

*Serve with a drizzle of olive oil. Enjoy!

 

 

3.) Open-Faced Egg with Tomato and Mushroom

 

This is your healthy sandwich without the bacon and any other fatty meat. Use whole-wheat bread for a more guilt-free meal.

Ingredients:

1 Tablespoon olive oil

2 Eggs

4 Tomato Slices

1/2 Pound Mushroom Slices of your choice

2slices whole-wheat bread

2 Tablespoons Parmesan cheese

Directions:

* In a Pan, heat oil over medium-high heat.

*Put the tomatoes and cook for 1-2 minutes on each side then set aside.

*Saute mushrooms in the pan until soft.

*Push mushrooms to the side of the pan and crack in each egg without breaking the yolk.

* Cook eggs as desired and toast your bread.

* Prepare sandwich. In layers: 2 slices of tomato, half mushrooms, and 1 egg on each slice bread and finish it by sprinkling it with Parmesan Cheese. Enjoy!
